A little history...
Since the 19th century, marcaires (from the Alsatian word “malker” which means milker) have cleared the fields of the Vosges Massif for their dairy cattle. The marcaires were the first to conquer the Hautes-Vosges, bringing their language, traditions and customs to the region.
Marcaires are mountain farmers who practise transhumant farming as they raise dairy cattle to produce various kinds of cheese, including the world-famous Munster.
Why is this known as a “marcaire” meal?
This kind of meal was commonly eaten by marcaires, the cowboys of Alsace, when they returned home for lunch or dinner and is now an age-old tradition within the region.
